Shrimp Burgers

As you may have guessed, we love our seafood! We have been experimenting with shrimp burgers for about a year, and this was the winning recipe. We borrowed it from Cooks Country, with a few modifications.




Ingredients

1 cup Panko Bread Crumbs



1 1/4 lb. peeled, deveined shrimp

2 Tablespoons Mayonnaise

1/4 tsp Pepper

1/8 tsp Salt

1/8 tsp Cayenne pepper

3 Scallions

3 Tablespoons Oil

Blend Panko in food processor, till you have fine crumbs. Set aside. Pat shrimp dry with paper towels and sprinkle with salt and pepper. Blend about 2/3 of the shrimp in the food processor. This will act as a glue, holding the entire burger together. Turn out into a bowl and set aside. Chop the remaining shrimp in the food processor into bite-sized pieces. Mix with the shrimp glue, mayo, spices, and scallions. At this point, you can start making the burgers. We found that chilling the mixture for about half an hour made for easier to form burgers. Heat the oil in a 12 inch pan over medium heat. Divide the shrimp mixture into four equal parts, and press into breadcrumbs to coat. Place in the pan and cook for about 6 min, three on each side. The breadcrumbs should be golden brown. Serve with All Purpose Sauce and Enjoy!
