Firepit Fruit Pies

Fruit pies are delicious. Most everyone agrees on that. The thing most people don't agree on is where to find the time to make them. Fruit pies are complicated with pie crust and filling. Especially if you're starting from scratch. Never fear! We have this simple recipie that will satisfy even the most busy person!
You could probably start with purchased pie crust, but we recommend that you make your own.
Ingredients
Pie crust
Canned pie filling of your choice
3 TB. Water in a bowl
1 1/2 cups vegetable oil
Roll out the pie crust to a thickness of about 1/8 of an inch. Use a biscuit cutter to cut out an even number of circles. The cutter should be at least 2 1/2 inches in diameter. Refrigerate for at least 10 min. Take out the crusts. Holding one circle, spoon a small amount of filling into the center. Be careful not to overfill! Dip your fingers in the water. Spread a thin layer of water around the edge of a second circle. This will act as glue to bind the circles together.

Place the second circle on top of the first or, you can simply fold the pie in half, for a turnover look. Using a fork or fingers, press around the edges of the circles, creating a pie!

There are two options for cooking these little pies. The first is on the stove-top. Fill a large skillet with oil over medium-high heat. Once the oil is bubbling carefully place four pies in the skillet. Cook for about 5 min. 2-3 min. on each side. Place on paper towels to dry and cool for about a minute. The other option is to cook them over a fire. If you have a firepit make a fire as you would normally. Place a grate on top and place a skillet on the grate. Fill the skillet with oil.
